Scrumptious Sundays


Jambalaya


2 tbls butter
1 medium bell pepper, chopped
2 tbls sugar
1/8 tsp pepper
1 can Italian stewed tomatoes, blended
1/8 tsp cayenne pepper
1 tsp cajun seasoning
4 chicken breasts, boiled & cubed
3 1/2 cups chicken broth
1 small onion, chopped
1 lb sausage link, sliced
1 1/2 tsp minced garlic
1 chicken bouillon cube
1 tsp cilantro
2 cups rinsed rice

Melt butter and saute onion and bell pepper in a large frying pan. Add remaining ingredients. Cover and simmer for 30 minutes or until rice is tender.
